Recently I received the results of my allergy tests. I was relieved surprised to see that I do not have any reaction to gluten/wheat. I was convinced that was causing my current health issues. I was not surprised that dairy is my issue.
The rest of my reactions were environmental (dust, animal dander, molds). Not easy to eliminate, but I can live with them.
I need to change the way I eat.
I need to implement consistent eating times. Eliminate unecessary fats & carbs. Replace processed food with natural, healthy food. Organic if possible.
Here’s what I need to eliminate from my diet:
- Dairy. All dairy including goat’s milk.
- Bananas. This was a Class IV reactive item. I’m surprised. I don’t really like bananas, so it’s not an issue. Except for banana bread. I love it. Adore it. No more banana bread. Sad me.
- Pineapple. Ok. I’m bummed. I LOVE pineapple in my cooking.
My first Vegetarian Meal
Recently I made my first vegetarian meal. I was greatly surprised by how much I liked it. I was even more surprised by my son, who ate three helpings! I discovered that eating healthy can be tasty, if you know how to cook!
What I used:
- Summer Squash
- Yellow & Green Bell Pepper
- Carrot Shreds
- Fresh Tomatoes
- Herbs d’ Provence
I simply sautéed the vegetables and then placed them over the brown rice pasta noodles. I was surprised at how delicious it was!
